Cheesecake a la raw!

After a whole week of suspense, I finally discovered what my friend Jovan was planning for my birthday.  We would spend Friday afternoon making raw cheesecake. I guess we can call this an introduction to the world of raw desserts as I had never actually tried raw cheesecake.

What a blessing for someone who is converting to an all raw diet!

We prepped by soaking raw walnuts and blending them with ingredients such as raw cacao, raw maca and dates to make a nutty paste that would become the crust. But first I tried my hand at putting a thin layer of coconut oil over the pan to prevent the cake from sticking.

Making the crust was actually fun even though Jovan was a critic of my technique. But it turned out great. After I had formed the crust, I decided it was time to get ready for the party. Jovan completed the filling and created that beautiful swirl design.

I had an awesome weekend with friends including a few who I had not seen in almost 10 years. I spent a few hours at Vegan Mania and also was blessed to go to dinner at Karyn’s Cooked. I wrapped up the weekend Sunday evening by dressing in the most comfortable outfit and dipping into this delicious cake and spending time with Jovan and Kate.

This is short and sweet!

After my run this morning, I made the most delicious fruit salad and I thought I would share. Here’s my ingredients. 1 banana sliced, 1 pear peeled and chopped, 1/2 cup strawberries, a handful of raspberries, 2tbs wheatgerm, and topped with raw agave to taste.

Today I noticed that the colors on the leaves are beginning to turn and that there’s a palpable sense in the air that change is here. And I’m embracing it!

Similarly, my perspective seems to be turning with each day. This new season brings opportunities for me including a change in career, Italian-language lessons, another birthday and most importantly – a new level of consciousness. I’ve taken upon sharing my thoughts and experiences – also new endeavor.

Earlier this year I announced that I would strive to live a healthy life – physically, mentally and spiritually. I came upon a quote which validates my quest.

“We are here to change. We are here to grow, develop and unfold. We are progressive beings that have infinite capacity.”

Of course, I did not know that my desire to seek healthy eating habits would lead me to a shift toward raw food. It’s now been a full month since I eliminated cooked and processed foods from my diet. Yes! this means no more cooked Indian food!

I first learned of the raw food movement several months ago and since then I had been teetering back and forth from raw meals to variations of cooked vegetarian and vegan meals. About a month ago, I decided I would give it a try wholeheartedly.

So far, my journey into the raw diet has been fairly successful. Of course I’ve had a few setbacks and occasions when I’ve given in to cooked temptations. At first glance, one would think this diet is all about limitations. If so, then one would think wrong!

Rather than limitations, I’m beginning to learn, that the raw food lifestyle is about learning to listen to our bodies and to live in a manner that nature intended. Well when I think of it that way it doesn’t sound quite as daunting. Now I’m thinking: I’m looking forward to health.

And with this I leave you my friends. I will continue to share my raw food journey as well as other ventures I embark on. Thanks for listening.
